Cupcake Heaven



These blow Hostess Cupcakes out of the water! I baked devil's food cupcakes (from the box) and frosted with chocolate frosting (from the container). Pretty basic, right? Well hold onto your seats people.... I filled them with cream filling! *gasp* Holy Hostess Batman...these guys are good! I did a few regular sized cupcakes but most are minis. I've made them for a function at Chris's work and have had requests to make them again. Takes a little bit of work, but so worth it. Just fill with the cream filling on the bottom, frost the top and decorate if desired.

Cream Filling

1/4 cup butter or margarine,
softened
1/4 cup shortening
2 cups confectioners' sugar
3 tablespoons milk
1 teaspoon vanilla extract
Pinch salt
Beat together for 5 minutes.

You can thank Allrecipes.com for this recipe. I have made the cake before but this time just used the cream filling recipe and a box mix/carton of frosting to make it a little easier on myself.


On another note, this is my man, the lego constructer. While the boys slept, he was hard at work assembling the umpteen million pieces of this set that Logan got for his birthday. What a great dad!! Of course, it was "deconstructed" in a matter of minutes the next morning when the boys, el destructo 1 and 2 got to it.
If you click on this picture you can actually see four men hanging from the helicopter! It totally shocked me while I was driving around the other day. I mean, how often do you see this??
